“奶酪火锅”是瑞士最普遍、最具盛名的火锅之一。瑞士人制作“奶酪火锅”一般都是先以蒜涂抹于锅底,再将不同口味的硬奶酪擦成碎末放入锅中加热成糊状,再加淀粉、白葡萄酒、大蒜、奶油等,继续煮并慢慢搅拌至完全融化呈浓浓的炼乳状,最后放进一些黑胡椒即可。
